Flavones and Flavone Derivatives as Antioxidants

Abstract
Quercetin, quercitrin, rutin, the chalcone of hesperi-din, but not hesperidin, were found to be antioxygenic in concs, as low as 3 mg. % for milk fat and lard. They were also found to act as antioxidants for the oil in plasma emulsion-milk, but their use is restricted to low cones., due to the flavor imparted to flavor-sensitive milk. Quercetin was found to be more effective than a-tocopherol, lecithin, or synergistic combinations of these latter in prolonged room temp. storage of milk fat. The authors believe the grouping,[long dash]C[long dash][image]of the pyrone or chalcone nucleus is responsible for the anti-oxidant activity. Since these compounds are associated with or form an integral part of Vitamin P, their addition to foods should not be objectionable.This publication has 33 references indexed in Scilit:
