Abstract
The solubility of peanut protein in aqueous solns. of 0-10% NaCl and pH 1-7 was detd. The presence or absence of arachin and conarachin could be demonstrated by a chromatographic technic with filter paper. On the basis of solubility in 10% NaCl, the peanut proteins could be separated into an insoluble fraction with poor fiber-forming properties and a soluble fraction with good fiber-formation.Keywords
