Abstract
Several explanations have been proposed for the American love affair with dietary fat. Among them are the “mouthfeel” of rich and creamy foods and the emotional link, in the minds of many, between these foods and mom's home cooking. As Dr Drewnowski explains, the new fat-replacement products are a promising breakthrough in dietary management, because they mimic the oral sensation of fat while helping to reduce fat consumption.Keywords
