Abstract
Alfalfa juice catalyzed oxidation of unsaturated fatty acids having two methylene-interrupted double bonds specifically, was not inhibited by cyanide, azide, fluoride, diethyldithiocarbamate or p-chloromercuribenzoate, but was inhibited by phenolic antioxidants. Alfalfa lipoxidase is similar to other plant lipoxidases. This publication has 4 references indexed in Scilit:
