Abstract
Addition of 0.2% modified deMan, Rogosa, Sharp broth permitted growth of 4 Bifidobacterium spp. in 10 or 12% nonfat dry milk. Serial propagations of B. adolescentis, B. infantis and B. longum were successful in the modified milk, but B. bifidum required addition of ascorbic acid. Cysteine (0.05%) plus pyruvic acid (0.05%) or ascorbic acid (0.2%) successfully replaced addition of the broth for B. longum and B. bifidum. B. infantis was stable to lyophilization and lyophilized B. infantis showed no decrease of viability during storage for 4 mo. at 4.degree. C under air in a dessicator or during suspension (2 .times. 106/ml) for at least 7 days in refrigerated pasteurized lowfat milk.
