A comparison of the flavours of farmed and trawled plaice

Abstract
Summary: The flavours of farmed plaice were compared with those of trawled plaice using a triangular tasting scheme. The results indicate that flavour differences do exist but that the taste panels were unable to pick out the differences reliably. It was also found that variations in treatments accorded to the farmed plaice prior to slaughter do not appear to affect their flavour.Keywords
