Abstract
Comparison of the Characteristic Physico‐Chemical Data of Modified Wheat and Potato Starches.A comparison of some physico‐chemical properties of wheat and potato starch has been given with regard to their behaviour before and after treatment by mild modification procedures. In this way a survey of the characteristic data of both starch sorts was obtained, i. g. the swelling and solubility capacities, the viscosity and limiting viscosity, extraction of the starch films, the X‐ray diffraction patterns a. o. which were elucidated and discussed.
