Abstract
The average nicotinic acid, pantothenic acid, choline and biotin content of fresh milk was found to be 0.91 mg., 3.1 mg., 149 mg. and 47.1 μg. per liter, respectively. In the processing of irradiated evaporated, dry skim or dry whole milk, the data show no significant losses in the contents of nicotinic acid, pantothenic acid, choline and biotin with the possible exception of the slightly lower biotin content of dry skim milk. The possibility of small and probably insignificant processing losses cannot be definitely excluded because the raw milk sources of the different types of milk tested were not identical, because of the variability of the data, and because of the limitations in accuracy of the microbiological methods used.
