Abstract
The Michaelis constants of soya bean [beta]-amylase with potato amylose and its short-chain fission products are of the same order. The enzyme will therefore exhibit no decided preference for either long or short chains. The early disappearance of the short chains from a mixture of long- and short-chain polysaccharides is demonstrated and must be attributed to a "multichain" mode of attack by the enzyme, the hydrolysis of short chains being soon completed because they are short.Keywords
