Abstract
A quantitative study of the component acids of ostrich fat is reported, and the results are correlated with those previously reported for other bird fats. Palmitic (24.8%), oleic (39.8%) and octadecadienoic acid (17.1%) are the major components, while myristic, stearic, arachidic, hexadecenoic, polyethenoid C16, octadecatrienoic and higher unsaturated acids are also present.Keywords
