Specificity and properties of wheat-germ esterase

Abstract
The specificity of wheat-germ esterase was studied in homogeneous and in heterogeneous systems. The enzyme will hydrolyse glyceryl, n-alkyl, aromatic and choline esters. Wheat-germ esterase is inhibited by organo-phosphorus compounds. Maximal rates of hydrolysis of sparingly soluble esters are frequently only attained at substrate concentrations in excess of the solubility limit of the substrate. The specificity and kinetics of esterases, including cholinesterase and lipase, are discussed.Keywords
