Bacteriological Changes in Acidophilus Milk at Room and Ice-Box Temperatures

Abstract
Acidophilus milk prepared with a R and a S strain of Lactobacillus acidophilus with initial acidities of 0.6 and 1.0% were stored at 4[degree] and 20[degree] C. The viability of these 2 strains differed. The R strain, the only one of proved therapeutic value, lost its viability more rapidly at 4[degree] than at 20[degree]. The original count was diminished approx. 90% after 3 days in the ice-box. The S strain lost its viability less rapidly, but storage in the ice-box was more detrimental than at room temp. It is recommended that acidophilus milk be kept in a cool place, but not in the ice-box.
