Abstract
Laboratory experiments on the dielectric properties of dead fish show that the decrease in power factor tan phi 0 observed as fish spoils can be used to give an objective measurement of 'freshness'. Extensive field investigations with simple portable instruments for measuring phi 0 make possible the design of an instrument which displays freshness on a scale directly related to sensory assessments and which is suitable for industrial use.Keywords
