Abstract
When immersed in dilute potassium hydroxide solution, milled rice kernels of different varieties undergo different patterns of degradation. Five types of degradation, designated A, B, B1, C and D have been identified. These types correlate well with other quality indices of rice.This publication has 7 references indexed in Scilit:
