A Centrifugal Technique of Measuring Food Retention

Abstract
A technique of placing food-saliva mixtures around teeth mounted in caps of centrifuge tubes followed by controlled centrifugation was used to determine the retention of foods on tooth surfaces. The carbohydrate content of the food determined by a modified anthrone technique was employed to quantitate foodstuffs. Various factors which may influence food retention in the mouth and the centrifugal retention index are discussed.Keywords
