Abstract
It is nearly twenty years since we published in Bee World a review by the late Mr. Pryce-Jones on the composition and properties of honey59. In 1957 this review was followed by a summary of new knowledge since 1950, written by Dr. J. W. White88. The time has now come for a third survey, to collect together some of the results obtained more recently, many by using newly available techniques. For the convenience of readers who have not got easy access to original publications, serial numbers in Apicultural Abstracts are entered with the references (page 56).
